This recipe is a festive New England take on the traditional British upside-down cake, with apples, fresh cranberries and pecans which provide a sharp, crunchy counterpoint to the rich, buttery batter. Great served warm with ice cream or custard.

Step preview

  1. Pre-heat oven - 160°C
  2. Grease a clean baking dish generously then set aside
  3. Add pecan halves to a clean baking tray
  4. Toast - 8 min, 160°C
  5. Remove from oven and let cool
  6. Transfer content of baking tray to baking dish
  7. Add cranberries, granny smith apple, demerara sugar and ground cinnamon to the baking dish then set aside
  8. Attach Whisk
  9. Add egg and caster sugar to the Kenwood Bowl
  10. Mix with splashguard fitted until slightly white and thick - 2 min, Speed 5
  11. Attach Creaming beater
  12. Add all purpose flour, ground cinnamon and salt to the Kenwood Bowl
  13. Mix with splashguard fitted until combined then scrape bowl - 1 min, Speed Min
  14. Then add unsalted butter to the Kenwood Bowl
  15. Mix with splashguard fitted until combined - 1 min, Speed Min
  16. Transfer mixture to baking dish
  17. Sprinkle with orange
  18. Bake - 40 min, 160°C
  19. Cover with foil
  20. Bake until skewer tests clean - 25 min, 160°C
  21. Remove from oven and let cool
  22. Serve
