A sweet plaited bread from Austria. For a classic version top the bread with pearl sugar before baking. Alternatively, fill it with your favourite filling, such as Nutella, jam, ground nuts or poppy seeds or brush it with a sugar glaze. User-generated recipes have not been retested by Kenwood.

Step preview

  1. Line a clean baking tray with parchment paper then set aside
  2. Add fresh yeast and milk to a clean medium bowl
  3. Stir until dissolved then set aside
  4. Attach the Dough Tool
  5. Add all purpose flour, butter, sugar, salt, vanilla extract, lemon, raisins and egg to the Cooking Chef XL Bowl
  6. Transfer content of medium bowl to Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Knead with splashguard fitted until dough forms - 5 min, Speed 2
  9. Cover with kitchen towel and let rise - 1 hr
  10. Pre-heat oven - 170°C
  11. Add milk and egg to a clean small bowl
  12. Stir until combined then set aside
  13. Transfer dough to work surface
  14. Divide dough into 3 equal pieces and form each piece into a long rope
  15. Plait the three ropes into a loaf, tucking under the ends
  16. Transfer shaped dough to baking tray
  17. Brush plaited loaf with egg mixture
  18. Top with pearl sugar
  19. Bake - 25 min, 170°C
  20. Transfer bread to cooling rack and let cool
  21. Serve
