Light and buttery shortbread biscuits with cranberry, orange and a hint of almond. We have used fresh cranberries however you could use dried cranberries, or you could try using dried sour cherries. Prepare them by roughly chopping some and halving the rest of them.

Step preview

  1. Grease and line a clean baking tray with parchment paper
  2. Attach Creaming beater
  3. Add unsalted butter, caster sugar, vanilla extract, almond extract, salt and orange to the Kenwood Bowl
  4. Mix with splashguard fitted until well combined then scrape bowl - 3 min, Speed 3
  5. Mix with splashguard fitted until smooth - 2 min, Speed 3
  6. Then add all purpose flour to the Kenwood Bowl
  7. Mix with splashguard fitted until combined - 30 sec, Speed Min
  8. Then add cranberries to the Kenwood Bowl
  9. Mix with splashguard fitted until just combined - 15 sec, Speed Min
  10. Transfer dough to lightly floured surface
  11. Form into a log
  12. Wrap with plastic wrap
  13. Chill in fridge
  14. Pre-heat oven - 160°C
  15. Retrieve the dough from the fridge and remove the plastic wrap
  16. Slice into rounds
  17. Transfer shaped dough to baking tray
  18. Sprinkle with orange
  19. Bake - 18 min, 160°C
  20. Remove from oven and let cool
  21. Transfer cookies to cooling rack and let cool
  22. Serve
