Step preview

  1. Grease a clean muffin pan lightly
  2. Add smoked bacon to a clean saucepan
  3. Cook until crispy while stirring frequently - 10 min, medium heat
  4. Strain bacon into heatproof bowl through a sieve and let cool
  5. Add whole milk, maple syrup and butter to the saucepan
  6. Heat until well combined then set aside - 1 min, low heat
  7. Add egg to the saucepan
  8. Stir until combined
  9. Attach Spiral Dough Tool
  10. Add bread flour and dried yeast to the Kenwood Bowl
  11. Mix with splashguard fitted until combined - 30 sec, Speed 1
  12. Transfer content of saucepan to Kenwood Bowl gradually while machine is running
  13. Mix with splashguard fitted until smooth - 10 min, Speed 1
  14. Transfer dough to proofing basket
  15. Cover with kitchen towel
  16. Prove - 1 hr
  17. Clean Kenwood Bowl
  18. Attach Creaming beater
  19. Add butter, light brown sugar and ground cinnamon to the Kenwood Bowl
  20. Transfer content of heatproof bowl to Kenwood Bowl
  21. Mix with splashguard fitted until smooth - 2 min, Speed 4
  22. Transfer dough to lightly floured surface
  23. Roll out
  24. Add filling to dough
  25. Sprinkle the dough with 2/3 of the bacon bits
  26. Roll tightly
  27. Cut into 12 equal pieces
  28. Transfer rolls to muffin pan
  29. Prove - 30 min
  30. Pre-heat oven - 190°C
  31. Retrieve the proved rolls
  32. Bake until golden brown - 20 min, 190°C
  33. Remove from oven and let cool - 10 min
  34. Clean Kenwood Bowl
  35. Attach Creaming beater
  36. Add maple syrup and icing sugar to the Kenwood Bowl
  37. Mix with splashguard fitted until smooth - 1 min, Speed 2
  38. Add water to the Kenwood Bowl while machine is running
  39. Mix with splashguard fitted until thick - 30 sec, Speed 2
  40. Drizzle rolls with glaze
  41. Scatter with the reserved bacon bits
  42. Turn out onto cooling rack and let cool
  43. Serve
