  1. Line a clean baking tray with parchment paper
  2. Grease a clean large mixing bowl lightly
  3. Add whole milk and butter to a clean saucepan
  4. Heat until melted then set aside - medium-low heat
  5. Attach Dough Hook
  6. Add bread flour, dried yeast, caster sugar, salt and egg to the Kenwood Bowl
  7. Mix with splashguard fitted until combined - 30 sec, Speed Min
  8. Add milk mixture to Kenwood Bowl gradually while machine is running
  9. Mix with splashguard fitted until dough forms - 10 min, Speed 1
  10. Transfer dough to large mixing bowl
  11. Cover with kitchen towel
  12. Prove - 1 hr
  13. Transfer dough to lightly floured surface
  14. Cut into 8 equal pieces
  15. Form into balls
  16. Flatten into a circle
  17. Transfer shaped dough to baking tray
  18. Cover with kitchen towel
  19. Prove - 45 min
  20. Pre-heat oven - 180°C
  21. Add mixed fresh fruit to a clean medium bowl
  22. Sprinkle with icing sugar
  23. Stir gently then set aside
  24. Clean Kenwood Bowl
  25. Attach Creaming beater
  26. Add milk curd and ricotta cheese to the Kenwood Bowl
  27. Sift caster sugar into the Kenwood Bowl
  28. Mix with splashguard fitted until combined - 30 sec, Speed 3
  29. Retrieve the proved dough
  30. Form a hollow in the centre of each disc by pressing a glass onto it
  31. Add cheese mixture to shaped dough
  32. Brush with egg
  33. Bake until golden brown - 20 min, 180°C
  34. Remove from oven and let cool
  35. Garnish rolls with fruit
  36. Dust with icing sugar
  37. Serve
