Crème Fraîche is a French fermented milk product with a high fat content, it has a pleasant, slightly sour but sweetish taste, very similar to sour cream. To make it, you need to ferment pasteurized cream from cow's milk. For fermentation, it is best to use natural yoghurt with pure, "live" cultures of Lactobacillus bulgaricus and Streptococcus thermophilus. The presence of these should be indicated on the packaging of the yogurt. Homemade Crème Fraîche can be stored at 4°c in a sealed package for 5 days.
