Step preview

  1. Pre-heat oven - 100°C
  2. Line a clean baking tray with parchment paper
  3. Draw a 24 cm circle on the parchment paper
  4. Attach Whisk
  5. Add egg white to the Kenwood Bowl
  6. Mix with splashguard fitted until foamy - 10 min, Speed Max
  7. Add caster sugar to the Kenwood Bowl gradually while machine is running
  8. Mix with splashguard fitted until stiff peaks form - 3 min, Speed Max
  9. Transfer mixture to piping bag
  10. Pipe mixture onto baking tray into a circle
  11. Bake - 1 hr, 100°C
  12. Remove from oven and let cool
  13. Clean Kenwood Bowl
  14. Attach Whisk
  15. Add whipping cream and icing sugar to the Kenwood Bowl
  16. Mix with splashguard fitted until stiff peaks form - 4 min, Speed 4
  17. Transfer mixture to piping bag
  18. Pipe mixture onto meringue
  19. Decorate with mixed berries and mint leaves
  20. Dust with icing sugar
  21. Serve
