Step preview

  1. Pre-heat oven - 180°C
  2. Line a clean baking tray with parchment paper
  3. Attach the Creaming Beater
  4. Add butter, water, sugar and salt to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Heat with splashguard fitted until melted - approx 5 min, 110°C
  7. Then add all purpose flour to the Cooking Chef XL Bowl
  8. Mix with splashguard fitted - 2 min, 75°C, Speed 1
  9. Leave - 5 min
  10. Add egg to the Cooking Chef XL Bowl while machine is running
  11. Mix with splashguard fitted - 5 min, Speed Max
  12. The dough is ready when it makes a ripple that closes slowly after mixing with a spatula
  13. Transfer dough to piping bag
  14. Pipe dough onto baking tray
  15. Keep the chouquettes well-spaced as they will swell
  16. Sprinkle with pearl sugar
  17. Bake - 22 min, 180°C
  18. Serve
