Egusi soup, also known as Melon soup is a West African dish, native to the south-eastern parts of Nigeria. This soup is usually served with garri (some people will prefer it with poundo yam or fufu or Semolina. Can be eaten with rice. User generated recipes have not been tested by Kenwood.

Step preview

  1. Fit thin slicing disc (4) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Turn direct prep attachment to position 2
  4. Slice onion and tomato into a clean large glass bowl with direct prep attachment
  5. Set aside and continue
  6. Fit stir tool to kCook bowl
  7. Add goat loin, dried stock fish fillet, all purpose seasoning , salt and water to the kCook bowl
  8. Fit kCook bowl to kCook Multi
  9. Turn direct prep attachment to position 1
  10. Slice hot chili peppers and onion into the kCook bowl with direct prep attachment
  11. Turn direct prep attachment to position 2
  12. Mix thoroughly until well combined
  13. Attach lid to kCook bowl with filler cap fitted
  14. Cook with filler cap fitted - 20 min, 100°C, speed 1
  15. Transfer content of kCook bowl to heatproof bowl then set aside
  16. Clean kCook bowl
  17. Fit stir tool to kCook bowl
  18. Add oil to the kCook bowl
  19. Fit kCook bowl to kCook Multi
  20. Attach lid to kCook bowl with filler cap fitted
  21. Cook with filler cap fitted - 10 min, 100°C
  22. Remove lid
  23. Add ground crayfish powder to the kCook bowl
  24. Transfer vegetables to kCook bowl
  25. Replace lid
  26. Cook with filler cap removed - 5 min, 120°C, speed 3
  27. Remove lid
  28. Add ground Egusi and ground crayfish powder to the kCook bowl
  29. Replace lid
  30. Cook with filler cap removed - 10 min, 120°C, speed 3
  31. Remove lid
  32. Return meat to kCook bowl
  33. Add all purpose seasoning and salt to the kCook bowl
  34. Stir until well combined
  35. Replace lid
  36. Stir with filler cap fitted - 30 sec, 120°C, speed 4
  37. Cook with filler cap fitted - 9 min 30 sec, 120°C
  38. Remove lid
  39. Add baby spinach to the kCook bowl
  40. Replace lid
  41. Cook with filler cap fitted - 4 min, 100°C, speed 3
  42. Remove lid
  43. Stir until well combined
  44. Serve
