What better way to show someone how much you love them than with a heart shaped pavlova topped with whipped cream, raspberry sauce, and an assortment of berries. Finish the pavlovas with any type of berries of your choice and you can replace raspberry sauce with a chocolate sauce if you are feeling more indulgent.

Step preview

  1. Pre-heat oven - 100°C
  2. Line a clean baking tray with parchment paper then set aside
  3. Attach Whisk
  4. Add egg white to the Kenwood Bowl
  5. Whisk with splashguard fitted until foamy - 2 min, Speed Max
  6. Add caster sugar to the Kenwood Bowl gradually while machine is running
  7. Whisk with splashguard fitted until stiff peaks form - 4 min, Speed Max
  8. Prepare a clean piping bag with open star tip
  9. Transfer meringue to piping bag
  10. Pipe the meringue onto the baking tray to form a heart shaped bottom
  11. Pipe a second layer on the outer edge only to create a cup
  12. Bake - 1 hr, 100°C
  13. Remove from oven and let cool
  14. Add raspberries and caster sugar to a clean saucepan
  15. Cook until softened while stirring occasionally - 10 min, medium heat
  16. Pour content of saucepan into medium bowl through a sieve
  17. Set aside and let cool
  18. Clean Kenwood Bowl
  19. Attach Whisk
  20. Add whipping cream and icing sugar to the Kenwood Bowl
  21. Whisk with splashguard fitted until stiff peaks form - 4 min, Speed 4
  22. Prepare a clean piping bag with open star tip
  23. Transfer cream to piping bag
  24. Pipe a rosette of cream onto the meringue hearts
  25. Drizzle with a teaspoon of raspberry sauce over the cream
  26. Decorate with mixed berries
  27. Serve
