Cherry, Chocolate and Pistachio Friands

Friands are closely related to financiers. Some recipes call for the nuts to be toasted and the butter to be clarified, however this recipe is a quick version. Traditionally baked as small oval shapes in a specially designed friand moulds, they also work perfectly when baked in small amounts in a cupcake or small muffin tin. This recipe finishes the friands with Kirsch-soaked cherries, chocolate ganache and pistachios for added indulgence - you could serve them warm dusted with icing sugar instead to keep it simple.

Step preview

  1. Pre-heat oven - 180°C
  2. Add unsalted butter to a clean saucepan
  3. Heat until melted - low heat
  4. Transfer content of saucepan to medium bowl
  5. Using a pastry brush, generously brush each of the holes in the muffin pan with some of the melted butter
  6. Reserve the remaining melted butter and let cool
  7. Add icing sugar, cocoa powder and all purpose flour to a clean large mixing bowl
  8. Stir until combined then set aside
  9. Attach Whisk
  10. Add egg white to the Kenwood Bowl
  11. Mix with splashguard fitted until frothy - 1 min, Speed 5
  12. Attach K Beater
  13. Transfer flour mixture to Kenwood Bowl
  14. Add ground almonds, vanilla extract and salt to the Kenwood Bowl
  15. Transfer the reserved melted butter into the Kenwood Bowl
  16. Mix with splashguard fitted until just combined - 20 sec, Speed Min
  17. Then add glace cherries and pistachios to the Kenwood Bowl
  18. Mix with splashguard fitted until just combined - 20 sec, Speed Min
  19. Transfer mixture to muffin pan
  20. Bake until springy to touch - 10 min, 180°C
  21. Remove from oven and let cool - 5 min
  22. Run a sharp knife or palette knife around the edges of the friands to loosen any stubborn edges
  23. Turn out onto cooling rack until completely cool
  24. Add glace cherries and kirsch to a clean small bowl
  25. Soak then set aside
  26. Add dark chocolate chips and milk chocolate chips to a clean heatproof bowl then set aside
  27. Add whipping cream to a clean saucepan
  28. Heat until simmering - medium heat
  29. Pour cream into heatproof bowl
  30. Let rest - 3 min
  31. Stir gently until combined
  32. Transfer chocolate mixture to piping bag
  33. Drizzle cake with chocolate mixture
  34. Place soaked fruit on cake
  35. Sprinkle with pistachios
  36. Garnish with edible gold dust powder
  37. Serve
