Step preview

  1. Attach the Dough Tool
  2. Add all purpose flour, salt, fresh yeast, egg, egg yolk and caster sugar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Knead with splashguard fitted - 7 min, Speed 1
  5. Add butter to the Cooking Chef XL Bowl while machine is running
  6. Knead with splashguard fitted - 7 min, Speed 1
  7. Remove the dough tool
  8. Remove the dough from the Cooking Chef XL bowl
  9. Shape into a ball until smooth
  10. Return the dough to the Cooking Chef XL bowl
  11. Prove with splashguard fitted - 30 min, 30°C, Speed OFF
  12. Line a clean baking tray with parchment paper then set aside
  13. Transfer dough to lightly floured surface
  14. Form into any shape you wish
  15. Transfer shaped dough to baking tray
  16. Prove - 45 min
  17. Pre-heat oven - 180°C
  18. Bake - 30 min, 180°C
  19. Remove from oven and let cool
  20. Line a clean baking tray with parchment paper
  21. Add hazelnuts to the baking tray
  22. Bake - 15 min, 180°C
  23. Remove from oven and continue
  24. Line a clean baking tray with parchment paper then set aside
  25. Clean Cooking Chef bowl
  26. Attach the Stir Tool
  27. Add caster sugar to the Cooking Chef XL Bowl
  28. Stir with splashguard fitted until caramelized - 2 min, 160°C, Stir 1
  29. Pour caramel into baking tray carefully
  30. Set aside and let cool
  31. Assemble the Food processor attachment to the machine
  32. Fit the knife blade to the Food processor bowl
  33. Break caramel into Food processor attachment
  34. Add 70g of roasted hazelnuts into the Food processor
  35. Attach the lid and ensure it is locked into place
  36. Pulse until fine crumbs form
  37. Blend until smooth
  38. Transfer content of Food processor attachment to medium bowl then set aside
  39. Clean Cooking Chef bowl
  40. Attach the Stir Tool
  41. Add milk chocolate to the Cooking Chef XL Bowl
  42. Mix with splashguard fitted until melted - 2 min, 60°C, Stir 1
  43. Remove the bowl from the machine
  44. Assemble the Food processor attachment to the machine
  45. Fit the knife blade to the Food processor bowl
  46. Add the remaining 65g of roasted hazelnuts into the Food processor
  47. Add icing sugar to the Food processor attachment
  48. Attach the lid and ensure it is locked into place
  49. Blend until smooth
  50. Transfer content of Cooking Chef XL Bowl to Food processor attachment
  51. Add salt to the Food processor attachment
  52. Blend until combined
  53. Transfer the praline paste into Food processor
  54. Add cocoa powder, grapeseed oil, vanilla bean pod and powdered milk to the Food processor attachment
  55. Blend until smooth
  56. Serve
