This very simple Chestnut paste is extremely versatile, typically used stand-alone either on toast for breakfast or thrown in some oats for tasty muesli. Also used as an ingredient in French patisserie for those nutty notes you've been striving to achieve. Will keep chilled in the fridge for 2 months. Here we served it simply spread on some delicious sourdough toast.

Step preview

  1. Attach the Stir Tool
  2. Add brown sugar, vanilla sugar, instant coffee and water to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted until thickened - 5 min, 100°C, Stir 2
  5. Then add chestnuts to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted until tender - 20 min, 90°C, Stir 3
  7. Assemble the Food Processor attachment to the machine
  8. Fit the knife blade into the Food Processor bowl
  9. Transfer content of Cooking Chef XL Bowl to Food processor attachment
  10. Attach the lid and ensure it is locked into place
  11. Blend until smooth
  12. Transfer content of Food processor attachment to large serving bowl
  13. Cool in fridge - 2 hr
  14. Serve
