Once made, you can then whisk in your flavourings such as vanilla, cocoa, fruit jams, nougat, etc. Pay attention to the right temperature of the ingredients so the buttercream doesn't get lumpy or curdles. Because of the different components, it is quite likely that your buttercream may curdle. But don't panic! If it has indeed curdled, set the temperature to 30 °C and beat the cream until all ingredients have combined to a smooth mixture. Then turn off the temperature and beat the buttercream to cool it down until it firms up again for the right texture. User generated recipes have not been tested by Kenwood.

Step preview

  1. Add vanilla pudding mix, sugar and milk to a clean small bowl
  2. Mix until well combined then set aside
  3. Add milk to a clean saucepan
  4. Cook until just boiling - medium-high heat
  5. Transfer content of small bowl to saucepan
  6. Cook until thickened
  7. Transfer mixture to heatproof bowl
  8. Cover with plastic wrap and let cool
  9. Attach the Whisk
  10. Transfer mixture to Cooking Chef XL Bowl
  11. Lift the Cooking Chef head and fit the heat shield
  12. Whisk with splashguard fitted until creamy - 2 min, Speed 4
  13. Transfer mixture to bowl then set aside
  14. Clean Cooking Chef bowl
  15. Attach the Whisk
  16. Add butter to the Cooking Chef XL Bowl
  17. Whisk with splashguard fitted until frothy - 4 min, Speed Max
  18. Spoon mixture into Cooking Chef XL Bowl bit by bit while machine is running
  19. Whisk with splashguard fitted until well combined - 5 min, Speed 4
  20. Then add icing sugar to the Cooking Chef XL Bowl
  21. Whisk with splashguard fitted until well combined - 30 sec, Speed 4
