Bring colour and taste to the party with these mini corn fritters. These bite sized golden fritters are full of flavour and heat, and served with a cool and creamy avocado dip on the side. Add more or less chillies for desired heat of your choice.

Step preview

  1. Line a clean plate with paper towels
  2. Attach K Beater
  3. Add all purpose flour, baking powder, egg and milk to the Kenwood Bowl
  4. Mix with splashguard fitted - 1 min, Speed 2
  5. Then add canned corn, green onion, red chili, smoked paprika, cilantro, salt and black pepper to the Kenwood Bowl
  6. Mix with splashguard fitted until combined - 2 min, Speed 1
  7. Heat a clean frying pan until hot - medium-high heat
  8. Add vegetable oil to the frying pan
  9. Transfer batter to frying pan bit by bit
  10. Transfer content of frying pan to plate
  11. Add avocado to a clean medium bowl
  12. Mash until creamy
  13. Add lime and sour cream to the medium bowl
  14. Mix until combined
  15. Season with salt and black pepper
  16. Transfer avocado to serving bowl
  17. Serve
