A chouquette is a type of choux pastry consisting of a small portion of dough sprinkled with pearl sugar. Chouquettes are not as sweet as other pastries. They are rich in the flavour of a butter and egg-based dough, made only slightly sweet by the sugar on top. They make a great afternoon tea snack and pair perfectly with a cup of coffee. For the best results, we recommend allowing the choux to rest in the fridge for at least an hour, or overnight, before piping. Choux pastry can be frozen for up to three months.

Step preview

  1. Prepare a piping bag fitted with a round piping tip
  2. Attach the Creaming Beater
  3. Add water and unsalted butter to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Heat until melted - 1 min, 100°C, Speed OFF
  6. Then add all purpose flour to the Cooking Chef XL Bowl
  7. Heat until combined - 1 min, 100°C, Speed 3
  8. Mix until smooth - 3 min, Speed 1
  9. Add egg to the Cooking Chef XL Bowl gradually while machine is running
  10. Mix until combined - 2 min, Speed 4
  11. Mix until smooth - 1 min, Speed 5
  12. Transfer mixture to piping bag
  13. Chill in fridge - 1 hr
  14. Pre-heat oven - 180°C
  15. Line a clean baking tray with parchment paper
  16. Pipe mixture onto baking tray evenly
  17. Brush with egg lightly
  18. Sprinkle with pearl sugar generously
  19. Bake until light golden then reduce heat - 15 min, 180°C
  20. Bake until golden brown - 10 min, 150°C
  21. Remove from oven and let cool
  22. Serve
