A chouquette is a type of choux pastry consisting of a small portion of dough sprinkled with pearl sugar. Chouquettes are not as sweet as other pastries. They are rich in the flavour of a butter and egg-based dough, made only slightly sweet by the sugar on top. They make a great afternoon tea snack and pair perfectly with a cup of coffee. For the best results, we recommend allowing the choux to rest in the fridge for at least an hour, or overnight, before piping. Choux pastry can be frozen for up to three months.
