Layers of light chocolate sponge, sweet cream and juicy cherries make this stunning gateau the perfect ending to a Valentine’s meal. This recipe uses a simple syrup, but you can opt for kirsch for a more boozy dessert. We decorated ours with dark chocolate shards made with our tempered dark chocolate recipe. However, you can use chocolate bark or chocolate vermicelli if you like.

Step preview

  1. Pre-heat oven - 180°C
  2. Grease and line 2 clean swiss roll pan with parchment paper
  3. Attach Whisk
  4. Add egg, egg yolk and caster sugar to the Kenwood Bowl
  5. Mix with splashguard fitted until light and fluffy - 5 min, Speed Max
  6. Sift all purpose flour, cocoa powder and baking powder into a clean bowl
  7. Fold flour mixture into Kenwood Bowl carefully
  8. Divide content of Kenwood Bowl between 2 swiss roll pan
  9. Bake until skewer tests clean - 10 min, 180°C
  10. Remove from oven
  11. Transfer sponge to cooling rack and let cool
  12. Retrieve the cake sponges
  13. Cut each sponge in half vertically and set aside
  14. Add water and caster sugar to a clean small bowl
  15. Microwave in microwave until sugar has dissolved
  16. Brush sponge with sugar mixture then set aside
  17. Clean Kenwood Bowl
  18. Attach Whisk
  19. Add whipping cream and icing sugar to the Kenwood Bowl
  20. Mix with splashguard fitted until stiff peaks form - 3 min, Speed 4
  21. Then fold cherries into the Kenwood Bowl gently
  22. Place one sponge on serving plate
  23. Transfer one third of cream to sponge
  24. Place a second sponge on top
  25. Transfer half of cream to sponge
  26. Place a third sponge on top
  27. Transfer the rest of cream to sponge
  28. Place the remaining sponge on top and leave plain
  29. Clean Kenwood Bowl
  30. Attach Whisk
  31. Add whipping cream and icing sugar to the Kenwood Bowl
  32. Mix with splashguard fitted until stiff peaks form - 3 min, Speed 4
  33. Transfer one third of cream to piping bag then set aside
  34. Spread a thin layer of the remaining cream over the top and sides of the cake
  35. Pipe cream onto cake
  36. Decorate with cherries and chocolate shavings
  37. Serve
