Step preview

  1. Line a clean baking tray with parchment paper
  2. Add all purpose flour and baking soda to a clean medium bowl
  3. Mix until combined then set aside
  4. Attach K Beater
  5. Add unsalted butter, caster sugar, brown sugar, salt, peanut butter, egg and vanilla extract to the Kenwood Bowl
  6. Mix with splashguard fitted until combined - 30 sec, Speed 2
  7. Transfer flour mixture to Kenwood Bowl
  8. Mix with splashguard fitted until combined - 20 sec, Speed 2
  9. Refrigerate in fridge - 30 min
  10. Pre-heat oven - 170°C
  11. Retrieve the chilled mixture from the fridge
  12. Roll into balls
  13. Place dough balls on baking tray
  14. Top with unsalted peanuts and dark chocolate chips
  15. Bake - 12 min, 170°C
  16. Remove from oven and let cool
  17. Turn out onto cooling rack until completely cool
  18. Clean Kenwood Bowl
  19. Attach Creaming beater
  20. Add icing sugar, cocoa powder, unsalted butter, vanilla extract and milk to the Kenwood Bowl
  21. Mix until combined then scrape bowl - 30 sec, Speed 3
  22. Mix - 20 sec, Speed 3
  23. Transfer chocolate mixture to piping bag
  24. Pipe chocolate mixture onto cookies
  25. Place another cookie on top and gently squeeze together to make a cookie sandwich
  26. Serve
