If you've ever thought of cauliflower as a boring vegetable, take a chance on this pickle and let it change your mind. Sharp and crisp, warm with spices, and vibrantly amber in colour, this pickle is great for using up that cauliflower that's been sat in your fridge for ages and is starting to look sorry for itself. Make sure your jars are sterilised by running them through a dishwasher or rinsing them with boiling water and drying them at a very low temperature in the oven. This recipe makes enough pickles to fill 4 x 500 ml jars.
