Often used in Vietnam as a filling for banh mi, these easy pickles are at their tastiest when served as a refreshing garnish alongside saltier dishes, such as ramen, pho, and even Korean fried chicken. This recipe makes enough to fill 4 x 500ml jars. Make sure your jars are sterilised by running them through a dishwasher or rinsing them with boiling water and drying them at a very low temperature in an oven.

Step preview

  1. Divide daikon and carrot between the clean jars then set aside
  2. Attach the Stir Tool
  3. Add rice vinegar, water, mirin and salt to the Cooking Chef XL Bowl

  5. Cook with splashguard fitted until boiling - 4 min, 110°C, Stir 1
  6. Pour content of Cooking Chef XL Bowl into 4 jars and let cool
  7. Refrigerate overnight
