A spinach and herb pancake filled with a whipped feta and cream cheese or ricotta filling. A spinach and coriander puree is made in the food processor attachment which is then whisked through the batter. This puree could be made with a mixture of herbs instead of coriander to use up any fridge leftovers you may have. Serve the pancakes warm or cold with your choice of toppings, we recommend sliced avocado, cherry tomatoes and/or cooked mushrooms.

Step preview

  1. Assemble the Food Processor attachment to the machine
  2. Fit the knife blade to the Food Processor bowl
  3. Add spinach and cilantro to the Food processor attachment
  4. Attach the lid and ensure it is locked into place
  5. Pulse until smooth
  6. Remove the attachment from the machine
  7. Transfer purée to small bowl then set aside
  8. Add baby spinach to a clean colander
  9. Place a colander over a large bowl
  10. Pour water into the colander and let cool
  11. Squeeze the excess water from the spinach
  12. Transfer content of colander to cutting board
  13. Chop coarsely
  14. Transfer the chopped spinach to Kenwood Bowl
  15. Attach K Beater
  16. Add feta cheese, cream cheese, milk, lemon juice, lemon zest, pine nuts, fresh chives and black pepper to the Kenwood Bowl
  17. Mix with splashguard fitted until combined - 30 sec, Speed 5
  18. Transfer mixture to bowl
  19. Refrigerate in fridge until needed
  20. Add butter to a clean frying pan
  21. Heat until melted - low heat
  22. Transfer content of frying pan to small bowl then set aside
  23. Reserve the frying pan for later
  24. Clean Kenwood Bowl
  25. Attach Whisk
  26. Add milk, egg, all purpose flour and salt to the Kenwood Bowl
  27. Mix with splashguard fitted until combined then scrape bowl - 30 sec, Speed 5
  28. Transfre the melted butter to Kenwood Bowl
  29. Mix with splashguard fitted until combined - 30 sec, Speed Max
  30. Transfer purée to Kenwood Bowl
  31. Mix with splashguard fitted until combined - 10 sec, Speed Max
  32. Heat frying pan until hot - medium heat
  33. Add butter to the frying pan
  34. Pour batter into frying pan
  35. Cook each side until set - 1 min
  36. Transfer content of frying pan to plate
  37. Cover with foil
  38. Place in a low oven while you cook the rest
  39. Repeat the same with the remaining batter
  40. Top with avocado, cherry tomatoes and mushrooms
  41. Serve
