Step preview

  1. Attach the Dough Tool
  2. Add bread flour, fine wheat semolina, fresh yeast, salt, sugar, olive oil and water to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Knead with splashguard fitted - 3 min, Speed 1
  5. Knead with splashguard fitted - 5 min, Speed 2
  6. The dough should not be sticky and it should come off the sides of the bowl easily
  7. Prove with splashguard fitted - 1 hr 30 min, 30°C
  8. The dough should double in size
  9. Transfer dough to lightly floured surface
  10. Divide the dough into 3
  11. Roll into balls
  12. Cover with plastic wrap
  13. Let rest - 45 min
  14. Pre-heat oven - 190°C
  15. Line a clean baking tray with parchment paper
  16. Transfer balls to baking tray
  17. Flatten the balls with the palm of your hand
  18. Add egg yolk and sunflower oil to a clean small bowl
  19. Mix until combined
  20. Brush egg mixture on the flattened dough
  21. Sprinkle with sesame seeds
  22. Bake - 20 min, 190°C
  23. Serve
