Like cinnamon swirls but with a twist. These are just edible joy, all swirled up in your hands. A soft, sweet dough, baked with swirls of sugary lemon zest filling and topped with a zingy lemon icing.

Step preview

  1. Pre-heat oven - 160°C
  2. Line a clean baking tray with parchment paper
  3. Place puff pastry on a clean lightly floured surface
  4. Roll out into a rectangle until 2mm thick
  5. Brush with butter
  6. Sprinkle with caster sugar and lemon
  7. Roll into a log
  8. Cut into 8 equal pieces until 2cm thick
  9. Transfer dough to baking tray
  10. Brush with egg
  11. Bake - 30 min, 160°C
  12. Remove from oven and let cool
  13. Attach Creaming beater
  14. Add lemon juice and icing sugar to the Kenwood Bowl
  15. Mix with splashguard fitted - 1 min, Speed Min
  16. Transfer icing to piping bag then set aside
  17. Add lemon curd to a clean piping bag
  18. Using a corer or sharp knife, carefully cut out the centre of the pastry puffs
  19. Pipe filling onto pastry into the center
  20. Pipe icing onto pastry
  21. Serve
