  1. Line a clean baking tray with parchment paper
  2. Scoop speculoos spread onto the baking tray
  3. Chill in freezer - 30 min
  4. Attach K Beater
  5. Add butter, caster sugar and light brown sugar to the Kenwood Bowl
  6. Mix with splashguard fitted until coarse crumbs form - 1 min, Speed Min
  7. Then add white chocolate chips and milk chocolate chips to the Kenwood Bowl
  8. Mix with splashguard fitted until combined - 30 sec, Speed Min
  9. Then add speculoos cookies, all purpose flour, baking powder and salt to the Kenwood Bowl
  10. Mix with splashguard fitted until combined - 30 sec, Speed Min
  11. Then add egg to the Kenwood Bowl
  12. Mix with splashguard fitted until combined - 30 sec, Speed Min
  13. Transfer dough to work surface
  14. Divide into 12 equal pieces
  15. Roll into balls
  16. Retrieve the baking tray from the freezer
  17. Transfer content of baking tray to dough balls
  18. Wrap the dough around the frozen spread so it is completely covered and sealed in
  19. Repeat the same with the rest of the dough balls
  20. Transfer dough balls to baking tray
  21. Chill in fridge - 1 hr
  22. Pre-heat oven - 180°C
  23. Place two lined baking trays inside the oven to heat up
  24. Retrieve the baking tray from the fridge
  25. Transfer cookies onto the hot trays and space apart evenly as they will spread during baking
  26. Bake - 15 min, 180°C
  27. Remove from oven and let cool
  28. Serve
