These elegant Spinach soufflés are a real showstopper, great for a dinner party where you are keen to impress! A little tricky, but well worth the effort, simply delicious.

Step preview

  1. Add water to a clean medium bowl then set aside
  2. Attach the Stir Tool
  3. Add water and spinach to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Cook with splashguard fitted until wilted - 1 min, 105°C, Stir 2
  6. Transfer content of Cooking Chef XL Bowl to medium bowl then set aside
  7. Assemble the Food Processor attachment to the machine
  8. Fit the knife blade to the Food Processor bowl
  9. Line a clean work surface with kitchen towel
  10. Transfer content of medium bowl to work surface
  11. Wrap tightly and squeeze out the excess water
  12. Transfer vegetables to Food processor attachment
  13. Attach the lid and ensure it is locked into place
  14. Blend until smooth
  15. Strain through a sieve
  16. Remove the attachment from the machine
  17. Clean Cooking Chef bowl
  18. Attach the Whisk
  19. Add egg white to the Cooking Chef XL Bowl
  20. Mix with splashguard fitted until soft peaks form - 5 min, Speed 5
  21. Transfer egg whites to medium bowl then set aside
  22. Clean Cooking Chef bowl
  23. Attach the Whisk
  24. Add salted butter, all purpose flour, milk and nutmeg to the Cooking Chef XL Bowl
  25. Cook with splashguard fitted until thickened - 5 min, 95°C, Speed 3
  26. Then add egg yolk to the Cooking Chef XL Bowl
  27. Transfer the spinach into the Cooking Chef XL Bowl
  28. Attach the Stir Tool
  29. Cook with splashguard fitted until combined - 1 min 30 sec, 80°C, Stir 1
  30. Let rest
  31. Pre-heat oven - 200°C
  32. Fold egg whites into Cooking Chef XL Bowl carefully
  33. Grease a clean ramekin with salted butter
  34. Sprinkle with parmesan cheese
  35. Spoon souffle into ramekin
  36. Place the ramekins onto a large baking tray
  37. Bake until lightly browned - 16 min, 200°C
  38. Remove from oven
  39. Serve immediately
