While fermentation was likely invented to preserve foodstuffs, it also comes with the additional benefit of boosting probiotics, or beneficial bacteria, which can help improve digestion and boost your immune system. Adding fermented foods to your daily diet is great for your body, and delicious too. This mango chutney boasts more depth of flavour from the fermentation process and will stand up to any punchy curry you serve it alongside. Be sure to remove the lids from the jars once a day and gently tap the bottom to prevent a build-up of gas, which could cause your jars to explode if left for too long. This recipe makes enough chutney to fill 2 x 400 ml jars. Make sure your jars are sterilised by running them through a dishwasher or rinsing them with boiling water and drying them at a very low temperature in the oven.

Step preview

  1. Add mango, ginger, garlic clove, red onion, cilantro, curry powder, mustard seeds, salt, sugar and cumin seeds to a clean bowl
  2. Stir until combined
  3. Divide content of bowl between 2 jars
  4. Set aside for 3 days
  5. Transfer content of jars to Cooking Chef XL Bowl
  6. Attach the Stir Tool
  7. Add water to the Cooking Chef XL Bowl
  8. Lift the Cooking Chef head and fit the heat shield
  9. Heat with splashguard fitted until hot - 2 min, 110°C, Stir 2
  10. Cook with splashguard fitted until combined - 6 min, 100°C, Stir 2
  11. Then add lime to the Cooking Chef XL Bowl
  12. Mix with splashguard fitted - 2 min, Stir 2
  13. Let cool - 1 hr
  14. Divide content of Cooking Chef XL Bowl between 2 jars
  15. Refrigerate until needed
