This simple red rice salad is delicious as a stand-alone simple lunch or as an accompaniment to a main course, family style sharer. There are many variations, as long as you use the specific red rice from the Carmague region of France. The rice has a savoury, nutty flavour, here we opted for a very simple vegetarian version.

Step preview

  1. Attach the Stir Tool
  2. Add water and salt to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted until boiling - 5 min, 120°C, Speed OFF
  5. Then add red rice to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted until softened - 20 min, 120°C, Speed OFF
  7. Then add fennel bulb and green beans to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted until softened - 5 min, 120°C, Stir 2
  9. Drain content of Cooking Chef XL Bowl into colander then set aside
  10. Assemble the Food Processor attachment to the machine
  11. Fit the Knife blade to the machine
  12. Add fresh parsley, lemon juice and olive oil to the Food processor attachment
  13. Blend until combined
  14. Strain content of Food processor attachment into jug through a sieve
  15. Remove the attachment from the machine
  16. Clean Cooking Chef bowl
  17. Attach the Stir Tool
  18. Transfer rice to Cooking Chef XL Bowl
  19. Add red bell pepper, green onion, black olives, walnuts and spinach to the Cooking Chef XL Bowl
  20. Mix with splashguard fitted until combined - 2 min, Stir 2
  21. Transfer content of jug to Cooking Chef XL Bowl
  22. Mix with splashguard fitted until combined - 1 min, Stir 2
  23. Serve
