Kimchi brings sourness, funk and spice to any meal and has taken the world by storm over the last few years. This dish is really quick and makes a perfect stress-free weeknight meal, but it is best to have your rice cooked in advance, so it has time to dry out a little, which is usually a great way to use up leftovers. You can add any veg that has been lurking in the back of your fridge to prevent waste, just finely dice and add along with the spring onions, ginger and garlic to make this dish your own.
