This rich yet simple cake is a specialty from the western French city of Nantes since the 18th century. It consists of an almond sponge soaked in a rum syrup and covered in rum-infused icing. Serve as a dessert or with coffee. User generated recipes have not been tested by Kenwood.

Step preview

  1. Pre-heat oven - 180°C
  2. Fit whisk tool to kCook bowl
  3. Add salted butter and sugar to the kCook bowl
  4. Fit kCook bowl to kCook Multi
  5. Attach lid to kCook bowl with filler cap fitted
  6. Whisk with filler cap fitted - 5 min, speed 5
  7. Then add egg to the kCook bowl
  8. Mix with filler cap fitted - 5 min, speed 7
  9. Then add all purpose flour, rum and ground almonds to the kCook bowl
  10. Mix with filler cap fitted - 5 min, speed 5
  11. Grease and line a clean round pan with parchment paper
  12. Transfer batter to round pan
  13. Bake - 45 min, 180°C
  14. Turn out onto cooling rack
  15. Brush the cake with half of the remaining rum
  16. Add icing sugar and rum to a clean medium bowl
  17. Mix until combined
  18. Spread cake with icing
  19. Serve
