Step preview

  1. Assemble the Food Processor attachment to the machine
  2. Fit the thick slicing disc, attach the lid and ensure it is locked into place
  3. Slice onion and bell pepper into the Food processor attachment
  4. Remove the Food Processor attachment from the machine and set aside
  5. Attach the Stir Tool
  6. Add olive oil to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Heat with splashguard fitted - 2 min, 120°C
  9. Then add veal chuck to the Cooking Chef XL Bowl
  10. Fry with splashguard fitted - 8 min, 120°C, Speed 3
  11. Transfer content of Cooking Chef XL Bowl to medium bowl
  12. Clean Cooking Chef bowl
  13. Attach the Stir Tool
  14. Transfer content of Food processor attachment to Cooking Chef XL Bowl
  15. Cook with splashguard fitted - 4 min, 120°C, Speed 3
  16. Transfer meat to Cooking Chef XL Bowl
  17. Add tomato, espelette pepper, white wine, chicken stock, salt, black pepper, green olives and dried sage to the Cooking Chef XL Bowl
  18. Mix with splashguard fitted - 10 sec, Speed 1
  19. Cook with splashguard fitted - 2 hr, 98°C, Speed OFF
  20. Transfer some of the sauce to small bowl
  21. Wait until the sauce has cooled down a little
  22. Add cornflour to the small bowl
  23. Mix until combined
  24. Transfer the cornflour mixture back into the Cooking Chef XL Bowl
  25. Cook - 5 min, 98°C, Speed 2
  26. Serve
