These easy filled pittas make a great dinner, and any leftovers can be used for lunch the next day. The onion pickles slightly in the lime juice, taking away the harshness and leaving them sweet and tangy to contrast the spices.

Step preview

  1. Add red onion to a clean small bowl
  2. Squeeze lime into the small bowl
  3. Sprinkle with salt
  4. Mix well then set aside
  5. Add iceberg lettuce to a clean small bowl then set aside

  11. Cook with splashguard fitted until browned - 5 min, 130°C, Stir 2
  12. Then add ground cumin, smoked paprika, ground coriander, dried oregano and cayenne pepper to the Cooking Chef XL Bowl
  13. Cook with splashguard fitted until fragrant - 4 min, 120°C, Stir 2
  14. Then season with salt
  15. Add pita bread to a clean plate
  16. Slice the pita bread in half
  17. Spread with Garlic mayonnaise
  18. Divide the pickled onion and lettuce between the pittas
  19. Pack each half of pitta bread with the content of the Cooking Chef bowl
  20. Serve
