Easy mini-Tiramisu in individual cups, the best twist on the classic Italian dessert. A layer of soft, coffee-soaked sponge fingers, covered with a layer of creamy mascarpone filling. This recipe can make 24 mini dessert cups, or 12 small dessert cups.

  3. Transfer sponge to mini dessert cup then set aside
  4. Attach Whisk
  5. Add whipping cream to the Kenwood Bowl
  6. Mix until stiff - 1 min, Speed Max
  7. Transfer cream to medium bowl then set aside
  8. Clean Kenwood Bowl
  9. Attach Whisk
  10. Add egg white to the Kenwood Bowl
  11. Mix with splashguard fitted until stiff peaks form - 2 min, Speed Max
  12. Transfer egg whites to medium bowl then set aside
  13. Clean Kenwood Bowl
  14. Attach Whisk
  15. Add egg yolk, caster sugar and mascarpone cheese to the Kenwood Bowl
  16. Mix until smooth - 5 min, Speed Max
  17. Attach Creaming beater
  18. Transfer cream to Kenwood Bowl
  19. Mix until combined - 30 sec, Speed 4
  20. Remove the Kenwood Bowl from the machine
  21. Transfer egg whites to Kenwood Bowl
  22. Fold until combined
  23. Transfer content of Kenwood Bowl to piping bag
  24. Pipe cream onto sponge
  25. Dust with cocoa powder
  26. Serve
