Soft, fluffy, subtle buttery, and only slightly sweet mini brioche buns. The recipe makes either 24 mini buns or 12 burger buns. They are the perfect buns to serve as an afternoon tea or a party snack. Serve them with any filling of your choice. Why not try them with pesto and tomato slices, or smoked salmon with cream cheese

Step preview

  1. Grease and line a clean baking tray with parchment paper
  2. Add milk and dried yeast to a clean jug
  3. Stir until combined
  4. Let rest - 5 min
  5. Attach the Whisk
  6. Add butter and caster sugar to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Mix with splashguard fitted until light and fluffy - 3 min, Speed 3
  9. Add egg to the Cooking Chef XL Bowl gradually while machine is running
  10. Mix with splashguard fitted until combined - 1 min, Speed 1
  11. Then add bread flour to the Cooking Chef XL Bowl
  12. Attach the Dough Tool
  13. Mix with splashguard fitted until combined - 1 min, Speed Min
  14. Pour content of jug into Cooking Chef XL Bowl while machine is running
  15. Knead with splashguard fitted until dough forms then scrape bowl - 10 min, Speed 1
  16. Remove the Dough Tool
  17. Prove with splashguard fitted - 1 hr, 30°C, Speed OFF
  18. Transfer dough to work surface
  19. Divide into pieces
  20. Roll into balls
  21. Place dough balls on baking tray evenly
  22. Cover with kitchen towel
  23. Prove until doubled - 1 hr
  24. Pre-heat oven - 180°C
  25. Retrieve the dough balls
  26. Brush with egg
  27. Sprinkle with sesame seeds
  28. Bake until golden brown - 20 min, 180°C
  29. Remove from oven
  30. Let cool slightly
  31. Serve
