These mini pavlovas are crunchy, fruity, creamy and incredibly easy to make. Decorate with any fruit of your choice and serve as a dessert or as an afternoon tea treat.

Step preview

  1. Draw 5cm circles onto two sheets of parchment paper, leaving a small gap between each circle
  2. Turn the paper over
  3. Grease and line a clean baking tray with parchment paper
  4. Pre-heat oven - 100°C
  5. Attach the Whisk
  6. Add egg white to the Cooking Chef XL Bowl
  7. Lift the Cooking Chef head and fit the heat shield
  8. Mix with splashguard fitted until foamy - 1 min, Speed Max
  9. Add caster sugar to the Cooking Chef XL Bowl gradually while machine is running
  10. Mix with splashguard fitted - 5 min, Speed Max
  11. Transfer meringue to piping bag
  12. Pipe meringue onto baking tray
  13. Bake - 1 hr, 100°C
  14. Remove from oven and let cool
  15. Clean Cooking Chef bowl
  16. Attach the Whisk
  17. Add whipping cream and icing sugar to the Cooking Chef XL Bowl
  18. Mix with splashguard fitted - 1 min 15 sec, Speed Max
  19. Transfer cream to piping bag
  20. Chill in fridge until needed
  21. Retrieve the meringues
  22. Pipe cream onto meringue
  23. Decorate with strawberries, raspberries and blueberries
  24. Garnish with mint leaves
  25. Dust with icing sugar
  26. Serve
