This recipe is perfect for entertaining friends on a hot summer’s day as it’s quick to make and tastes even better alongside a cold beer. Briny mussels are fried in a light beer-infused batter and skewered, ready to be dipped into a rich, garlicy mayonnaise that is so easily made from scratch. If you can’t get hold of fresh mussels (or don’t want the hassle of cleaning and deshelling them) then pre-cooked mussels will work just as well and cooking times don’t have to be adjusted.

Step preview

  1. Attach the Whisk
  2. Add all purpose flour, sea salt and baking soda to the Cooking Chef XL Bowl
  3. Make a well in the centre
  4. Add egg to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Mix until combined - 1 min, Speed 1
  7. Add pale lager beer to the Cooking Chef XL Bowl gradually while machine is running
  8. Whisk until smooth - 1 min, Speed 2
  9. Transfer content of Cooking Chef XL Bowl to bowl then set aside
  10. Assemble the Food Processor attachment to the machine
  11. Fit the knife blade to the Food Processor bowl
  12. Add egg yolk, dijon mustard, lemon, sea salt and black pepper to the Food processor attachment
  13. Attach the lid and ensure it is locked into place
  14. Mix until smooth
  15. Pour extra virgin olive oil into the Food processor attachment slowly while machine is running
  16. Mix until combined
  17. Add garlic clove to the Food processor attachment
  18. Mix until combined
  19. Remove the attachment from the machine
  20. Transfer mixture to small bowl then set aside
  21. Add all purpose flour to a clean bowl
  22. Add mussels to the bowl
  23. Toss until combined
  24. Dip mussels into batter then set aside
  25. Clean Cooking Chef bowl
  26. Add vegetable oil to the Cooking Chef XL Bowl
  27. Remove the Whisk
  28. Heat until hot - 2 min, 180°C, Speed OFF
  29. Transfer mussels to Cooking Chef XL Bowl
  30. Cook until cooked through - 3 min, 180°C, Speed OFF
  31. Transfer mussels to plate
  32. Repeat the same with the remaining mussels
  33. Thread five mussels onto each bamboo skewer
  34. Serve
