This spicy street food is as popular in Scotland as it is in India, where it originated, and can be made with meat, vegetables, and seafood. Tender cod is coated in a light, chilli-flecked batter and shallow fried until golden and crispy. These pakoras taste great served simply with a squeeze of fresh lime juice or add a cooling yoghurt raita for those who need to balance their spice.

Step preview

  1. Assemble the Food Processor attachment to the machine
  2. Fit the knife blade to the Food Processor bowl
  3. Add garlic clove, green chili, ginger, vegetable oil, salt and lime juice to the Food processor attachment
  4. Attach the lid and ensure it is locked in place
  5. Blend until well blended
  6. Remove the attachment from the machine
  7. Transfer content of Food processor attachment to medium bowl
  8. Add garam masala and ground turmeric to the medium bowl
  9. Mix until combined
  10. Add cod fillet to the medium bowl
  11. Toss gently until coated
  12. Refrigerate - 1 hr
  13. Add all purpose flour to a clean small bowl then set aside
  14. Add gram flour, baking powder, nigella seeds, ground turmeric, cilantro, water and salt to a clean medium bowl
  15. Mix until combined
  16. Add vegetable oil to the Cooking Chef XL Bowl
  17. Heat with splashguard fitted - 2 min, 180°C, Speed OFF
  18. Remove the marinated fish from the fridge
  19. Coat fish with flour
  20. Transfer fish to medium bowl
  21. Coat gently
  22. Transfer fish to Cooking Chef XL Bowl
  23. Cook with splashguard fitted - 2 min, 180°C, Speed OFF
  24. Carefully flip each piece of fish
  25. Cook with splashguard fitted - 2 min, 180°C, Speed OFF
  26. Repeat the same with the remaining fish
  27. Serve with lime
