Vegan roulades that taste just as savoury as beef olives! For this recipe, I’m using seitan as a meat alternative. This dish goes best with braised red cabbage and dumplings. It is the perfect vegan Christmas dinner, because you can easily prepare it a few days ahead. You can make 4 larger roulades or 8 smaller ones when preparing your dough. Step preview

  1. Cut the pickle into 4 or 8 sticks (depending on the size of the roulades)
  2. Cut the onion into 4 or 8 wedges
  3. Set aside and continue
  4. Add the ingredients into the appliance bowl
  5. Add the ingredients into a jug
  6. Mix until well combined then pour into the appliance bowl
  7. Attach the K-Beater
  8. Lift the Cooking Chef head and fit the heat shield
  9. Mix to a homogeneous dough - 10 sec, Speed 1
  10. Remove the dough, place onto the work surface
  11. Roll into a long sausage until it reaches approx 30cm in length
  12. If you prefer larger roulades, cut the roll into 4 pieces; for smaller roulades cut into 8 pieces
  13. Fit the Pasta Roller attachment to the machine
  14. Adjust the setting to 1 and start the machine on speed 1
  15. Flatten the pieces of dough using the palms of your hands and pass each piece through the roller twice
  16. Repeat passing the dough through the rollers on setting 2
  17. If necessary, use your hands to stretch the seitan pieces a little further to stop the dough from shrinking back quickly
  18. Brush each circle with mustard
  19. Place 1 piece of pickle and 1 onion wedge into the middle and roll it up tightly into a log
  20. Add the ingredient to a pan covered with a lid
  21. Heat until melted
  22. Add the roulades with the open side facing down
  23. Fry for 2-3 minutes - high heat
  24. Turn the roulades and fry on the other side for another 2-3 minutes until golden brown on all sides
  25. Remove the roulades and set aside
  26. Add the ingredient to the pan covered with a lid
  27. Heat until melted
  28. Add the ingredient and fry until translucent
  29. Add the ingredients
  30. Fry over medium heat until the paste starts to brown
  31. Add the ingredients while stirring continuously
  32. Add the ingredients
  33. Combine and bring to a boil, then put the roulades into the sauce
  34. Turn the heat down and simmer covered - 40 min
  35. Remove the herbs, bay leaf, pimento and juniper berries before serving
  36. Season to taste if necessary
  37. Serve
