A flavour packed parsley salad accompaniment which is refreshing and vibrant, serve alongside falafel, kibbeh and warm pitta breads. If you have time, prepare this salad in advance and refrigerate to allow the flavours to develop.

Step preview

  1. Assemble the Food Processor attachment to the machine
  2. Fit the knife blade to the Food Processor bowl
  3. Add fine bulgur and water to a clean small bowl
  4. Cover with a plate and set aside
  5. Add fresh parsley, mint leaves and dill to the Food processor attachment
  6. Attach the lid and ensure it is locked into place
  7. Chop until combined
  8. Transfer herbs to medium bowl then set aside
  9. Add salad tomatoes to the Food processor attachment
  10. Attach the lid and ensure it is locked into place
  11. Pulse briefly
  12. Transfer tomatoes to medium bowl
  13. Add cucumber, olive oil, lemon, lemon zest, salt, allspice and ground cinnamon to the medium bowl
  14. Transfer content of small bowl to salad
  15. Stir until combined
  16. Serve
