Step preview

  1. Line the baking tray with parchment paper and set aside
  2. Attach the Whisk
  3. Add the egg whites into the appliance bowl
  4. Whisk with splashguard fitted until foamy - 1 min, Speed Max
  5. While the machine is running, gradually add sugar
  6. Whisk until stiff peaks formed - 5 minutes, speed Max
  7. Transfer the meringue into a medium bowl and set aside
  8. Clean the appliance bowl
  9. Add the ingredients into the appliance bowl
  10. Cook with splashguard fitted until hot - 5 min, 80°C, Speed OFF
  11. Working in batches, gently scoop a heaped tablespoon of meringue into the appliance bowl
  12. Cook with splashguard fitted - 5 min, 90°C, Speed OFF
  13. Using a spoon, carefully flip the meringue over
  14. Cook with splashguard fitted - 5 min, 90°C, Speed OFF
  15. Place the meringue on the prepared baking tray
  16. Repeat the same process with the remaining meringue mixture
  17. Chill the meringues in the fridge until needed
  18. Strain the milk from the appliance bowl through a sieve into a jug
  19. Clean the appliance bowl and fit the Creaming beater
  20. Add the ingredients into the appliance bowl
  21. Whisk with splashguard fitted - 2 min, Speed Max
  22. While the machine is running, pour the strained milk into the appliance bowl - 1 min, Speed Min
  23. Cook with splashguard fitted until thickened - 10 min, 85°C, Speed Min
  24. Pour the mixture through a sieve into a medium bowl
  25. Cover with plastic wrap and chill in the fridge for 1 hour
  26. Pour approx 100 g of the chilled milk into each serving bowl
  27. Top with 2-3 meringues
  28. Garnish with the ingredients
  29. Serve
