Easy, flavor-packed salmon skewers, coated in a Mediterranean-style marinade with fresh garlic, olive oil, citrus, herbs and spices. These skewers can be baked in the oven or you can cook these on the grill or griddle until the salmon is fully cooked. If you are using wooden skewers, soak them in water for 10 minutes to prevent them from burning.

Step preview

  1. Line a clean baking tray with parchment paper
  2. Assemble the Food Processor attachment to the machine
  3. Fit the Knife Blade to the Food Processor bowl
  4. Add olive oil, lemon, garlic clove, fresh thyme, dried oregano, ground cumin, chili flakes and ground coriander to the Food processor attachment
  5. Attach the lid and ensure it is locked into place
  6. Blitz on speed MAX for 30 seconds
  7. Transfer mixture to medium bowl
  8. Add salmon filet to the medium bowl
  9. Mix until coated
  10. Cover with plastic wrap
  11. Chill in fridge - 30 min
  12. Pre-heat oven - 180°C
  13. Remove the bowl from the fridge
  14. Add zucchini and red onion to a clean plate
  15. Thread zucchini, onion and salmon onto the skewer, alternating between them
  16. Place skewer onto the prepared baking tray
  17. Repeat the whole process until all the ingredients have been used up
  18. Bake - 15 min, 180°C
  19. Serve
