This flavourful recipe uses maple syrup and fruit to sweeten the cake. If making the day before stop after baking the cake, let cool slightly in the tin and wrap tightly in plastic wrap. The next day make the syrup and spoon over. This keeps the cake from getting too soggy.

  1. Pre-heat oven - 170°C
  2. Grease and line a clean round pan with parchment paper
  3. Fit max blade to kCook bowl
  4. Add orange to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl with filler cap fitted
  7. Blend with filler cap fitted - 30 sec, speed 10
  8. Remove max blade
  9. Add egg yolk, maple syrup, ground almonds, all purpose flour and baking powder to the kCook bowl
  10. Fit whisk tool to kCook bowl
  11. Mix with filler cap removed - 1 min, speed 6
  12. Transfer mixture to bowl
  13. Clean kCook bowl
  14. Fit whisk tool to kCook bowl
  15. Add egg white to the kCook bowl
  16. Fit kCook bowl to kCook Multi
  17. Attach lid to kCook bowl
  18. Whisk with filler cap removed - 2 min, speed 7
  19. Transfer content of bowl to kCook bowl
  20. Mix with filler cap removed - 2 min, speed 4
  21. Then add raspberries to the kCook bowl
  22. Mix with filler cap removed - 30 sec, speed 4
  23. Transfer mixture to round pan carefully
  24. Bake - 45 min, 170°C
  25. Remove from oven and let cool
  26. Clean kCook bowl
  27. Fit stir tool to kCook bowl
  28. Add orange juice, orange, maple syrup, lemon, grapefruit and grapefruit juice to the kCook bowl
  29. Fit kCook bowl to kCook Multi
  30. Attach lid to kCook bowl
  31. Heat with filler cap removed - 98°C, speed 3
  32. Cook with filler cap removed - 5 min, 94°C, speed 3
  33. Poke holes in the cake with a skewer
  34. Drizzle cake with syrup
  35. Remove the cake from the tin
  36. Serve
