These festive treats are a modern twist on the classic mince pie and a great way to add mincemeat into your holiday baking. Spiced sponge filled with fruity mincemeat and finished with a lavish brandy buttercream.

Step preview

  1. Pre-heat oven - 180°C
  2. Line a clean cupcake pan
  3. Attach the Creaming Beater
  4. Add butter and caster sugar to the Cooking Chef XL Bowl
  5. Lift the Cooking Chef head and fit the heat shield
  6. Mix with splashguard fitted - 3 min, Speed 5
  7. Add egg to the Cooking Chef XL Bowl gradually while machine is running
  8. Mix with splashguard fitted until combined - 2 min, Speed 1
  9. Then add all purpose flour, mixed spice and baking powder to the Cooking Chef XL Bowl
  10. Mix with splashguard fitted until combined - 1 min, Speed 3
  11. Spoon mixture into cupcake pan
  12. Bake until skewer tests clean - 20 min, 180°C
  13. Remove from oven and let cool
  14. Using a cupcake corer or sharp knife, cut the centre of each cupcake
  15. Fill with mince pie filling then set aside
  16. Clean Cooking Chef bowl
  17. Attach the Creaming Beater
  18. Add butter to the Cooking Chef XL Bowl
  19. Mix with splashguard fitted until light and fluffy - 3 min, Speed 4
  20. Then add icing sugar to the Cooking Chef XL Bowl
  21. Mix with splashguard fitted until smooth - 3 min, Speed 3
  22. Then add brandy to the Cooking Chef XL Bowl
  23. Mix with splashguard fitted - 30 sec, Speed 1
  24. Transfer buttercream to piping bag
  25. Pipe buttercream onto cupcakes
  26. Decorate with sprinkles
  27. Serve
