This brunch dish is full of bright flavours, perfect for sharing with friends. The sharp lemon curd goes great with the sweet, fresh strawberry sauce. This recipe does take a little longer to prepare so you could make it the day before and chill in the fridge, reheat covered in foil to prevent burning. For this recipe use a cream that is about 42% - 48% fat content.

Step preview

  1. Add cornstarch and water to a clean small bowl
  2. Mix until combined
  3. Fit whisk tool to kCook bowl
  4. Add lemon juice, lemon, caster sugar, egg yolk and unsalted butter to the kCook bowl

  6. Transfer cornflour mixture to kCook bowl
  7. Attach lid to kCook bowl
  8. Cook with filler cap removed - 8 min, 80°C, speed 6
  9. Transfer mixture to medium bowl and let cool
  10. Clean kCook bowl
  11. Fit stir tool to kCook bowl
  12. Add whipping cream - 48% and milk to the kCook bowl
  13. Fit kCook bowl to kCook Multi
  14. Attach lid to kCook bowl
  15. Cook with filler cap removed - 2 min, 80°C, speed 1
  16. Then add egg, caster sugar and vanilla extract to the kCook bowl
  17. Mix with filler cap removed - 3 min, speed 5
  18. Pour mixture into jug then set aside
  19. Add croissant to a clean baking dish
  20. Pour content of jug into baking dish
  21. Set aside - 30 min
  22. Pre-heat oven - 180°C
  23. Transfer content of medium bowl to baking dish
  24. Scatter strawberries over the baking dish
  25. Bake - 40 min, 180°C
  26. Remove from oven then set aside
  27. Clean kCook bowl
  28. Fit max blade to kCook bowl
  29. Add strawberries and caster sugar to the kCook bowl
  30. Fit kCook bowl to kCook Multi
  31. Attach lid to kCook bowl with filler cap fitted
  32. Blend with filler cap fitted - 30 sec, speed 12
  33. Retrieve the croissant bake
  34. Drizzle topping with purée
  35. Serve
