A French classic treat: crispy on the outside and spongy and soft on the inside, delicious served with tea or coffee. As a simple variation you could add zested citrus or other extracts. For best results we recommend that you prepare the tin in advance and freeze it for one hour.

Step preview

  1. Grease the madeleine tin and put in the freezer for an hour for best results
  2. Add the ingredient into the warming bowl, fit the splashguard
  3. Heat until melted - 5 minutes, heat setting 9, speed Off
  4. Remove the warming bowl and set aside
  5. Fit the Whisk Tool
  6. Add the ingredients into the 5L bowl
  7. Mix - 2 minutes, speed Max
  8. Remove the Whisk tool, fit the Creaming beater
  9. Then add the ingredients into the 5L bowl
  10. Mix then scrape the bowl – 20 seconds, speed 1
  11. Mix until combined – 10 seconds, speed 1
  12. Transfer the melted butter into the 5L bowl
  13. Mix until combined – 20 seconds, speed 1
  14. Transfer the mixture into a piping bag
  15. Leave to rest - 30 minutes
  16. Pre-heat the oven to 190°C
  17. Pipe the mixture into the madeleine tin with approx 1 tablespoon of mixture
  18. Tap the tray on a worksurface to release the bubbles
  19. Bake - 8 minutes, 190°C
  20. Remove from the oven and allow to cool in the tin - 2 minutes
  21. Loosen them up with a fork or a palette knife before tipping the whole tray out onto a cooling rack
  22. Let cool completely
  23. Dust with icing sugar
  24. Serve
