Jackfruit is the perfect plant-based alternative to the traditional chicken in this recipe, with its ability to soak up flavour and its uncanny shredded-meat appearance. Cooked in an aromatic, spicy sauce packed with onion, garlic, Mexican spices, and chipotle chillies, this is a great recipe to try if you’re vegan, or just trying to increase your repertoire of plant-based meals. Make sure each tortilla has a good scattering of red onion, creamy avocado, fresh coriander, crumbly vegan feta cheese and a big spritz of lime before serving.

Step preview

  1. Attach the Stir Tool
  2. Add olive oil to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Heat with splashguard fitted - 1 min, 120°C, Speed OFF
  5. Then add onion and garlic clove to the Cooking Chef XL Bowl
  6. Cook with splashguard fitted until translucent - 4 min, 120°C, Stir 2
  7. Then add ground cumin, ground coriander, dried oregano, chipotle peppers in adobo sauce, canned whole tomatoes, vegetable stock and fine sea salt to the Cooking Chef XL Bowl
  8. Cook with splashguard fitted - 10 min, 102°C, Stir 3
  9. Remove the bowl from the machine
  10. Let cool slightly - 5 min
  11. Assemble the Food Processor attachment to the machine
  12. Fit the Knife Blade to the Food Processor bowl
  13. Transfer content of Cooking Chef XL Bowl to Food processor attachment
  14. Attach the lid and ensure it is locked into place
  15. Blend until smooth
  16. Remove the attachment from the machine
  17. Clean Cooking Chef bowl
  18. Attach the Stir Tool
  19. Transfer sauce to Cooking Chef XL Bowl
  20. Add canned jackfruits to the Cooking Chef XL Bowl
  21. Heat with splashguard fitted - 1 min, 110°C, Stir 2
  22. Cook with splashguard fitted - 10 min, 102°C, Stir 2
  23. Then add lime to the Cooking Chef XL Bowl
  24. Stir with splashguard fitted until combined - 1 min, Stir 1
  25. Pre-heat a clean frying pan - high heat
  26. Add corn tortilla to the frying pan
  27. Heat each side - 10 sec
  28. Place tortillas on 4 serving plates
  29. Divide the jackfruit mixture between tortillas
  30. Top with red onion, avocado, cilantro and vegan feta cheese
  31. Serve with lime
