This flavoured vinegar is great for a salad dressing and works well in a marinade for lamb or fish. This recipe takes 3 weeks to infuse and uses one 500ml jar.

  1. Attach the Stir Tool
  2. Add white wine vinegar to the Cooking Chef XL Bowl
  3. Lift the Cooking Chef head and fit the heat shield
  4. Cook with splashguard fitted - 10 min, 94°C, Stir 1
  5. Add mint leaves and lemon to a clean jar
  6. Carefully pour the warm vinegar into the jar
  7. Store in a cool, dark place for 3 weeks, shaking the jar twice a week
  8. Strain liquid into bottle
  9. Add lemon and mint leaves to the bottle
  10. Serve
