Step preview

  1. Making the pastry:
  2. Preheat an oven to 160ºC
  3. Fit the K-Beater
  4. Add the ingredients into the appliance bowl, fit the splashguard
  5. Mix until smooth then scrape the bowl - 3 minutes, speed 3
  6. Then add the egg
  7. Mix until smooth - 2 minutes, speed 3
  8. Divide the dough into two pieces
  9. Using a rolling pin, roll out the dough between two sheets of parchment paper to a thickness of 3mm
  10. Cut out into rounds and place them in the tart pans
  11. Prick the pastry with a fork
  12. Bake - 30-40 minutes, 160°C
  13. Remove from the oven and let cool
  14. Making the cream:
  15. Clean the appliance bowl and fit the Whisk Tool
  16. Add the ingredients into the appliance bowl, fit the splashguard
  17. Whisk until pale and light - 1 minute, speed 2
  18. Then add the ingredient
  19. Whisk - 30 seconds, speed 2
  20. Then add the juice gradually while the machine is running - 1 minute, speed 2
  21. Transfer the mixture into a saucepan
  22. Heat until thickened – 5 minutes, medium heat
  23. Remove from the heat and add the butter
  24. Mix until melted and well combined
  25. Pour into a heatproof bowl and cover with plastic wrap
  26. Making the meringue:
  27. Preheat an oven to 120ºC
  28. Line a baking tray with parchment paper and set aside
  29. Clean the appliance bowl and fit the Whisk Tool
  30. Add the ingredient into the appliance bowl, fit the splashguard
  31. Then add the sugar gradually while the machine is running - 2 minutes, speed 4
  32. Then add the sugar gradually while the machine is running - 1 minute, speed 4
  33. Transfer the meringue to a piping bag
  34. Pipe thin lines of meringue onto the baking tray
  35. Bake - 1 hour, 120°C
  36. Remove from the oven
  37. Decorate with colouring and set aside
  38. Assembly:
  39. Retrieve the cooled pastry cases and pipe the cream into them
  40. Smooth with a spatula and chill - 1 hour
  41. Decorate with meringue pieces
  42. Serve
