Step preview

  1. Making the sponge:
  2. Preheat an oven to 150ºC
  3. Line baking trays with parchment paper
  4. Place a rectangular cake ring onto each tray and set aside
  5. Fit the Whisk Tool
  6. Add the ingredients into the appliance bowl, fit the splashguard
  7. Mix - 1 minute, speed 3
  8. Then add the ingredients
  9. Mix - 1 minute, speed 3
  10. Then add the ingredients
  11. Mix - 2 minutes, speed 4
  12. Transfer the cake mixture to a large glass bowl and set aside
  13. Clean the appliance bowl and fit the Whisk Tool
  14. Add egg whites into the appliance bowl, fit the splashguard
  15. Gradually add the sugar while the machine is running - 3 minutes, speed 6
  16. Fold the whisked egg whites into the cake mixture with a spatula until well combined
  17. Spread the mixture into 2 cake rings, about 2cm thick
  18. Add cocoa powder to the rest of the mixture
  19. Fold until well combined
  20. Spread the mixture into the third cake ring, about 1cm thick
  21. Bake – 30 minutes, 150°c
  22. Remove from the oven and let cool
  23. Making the ganache:
  24. Melt the chocolate in a bain-marie
  25. Heat the cream, then fold it into the chocolate in 3 batches
  26. Set aside in a cool place
  27. Making the icing:
  28. Clean the appliance bowl and fit the Whisk Tool
  29. Add the ingredients into the appliance bowl, fit the splashguard
  30. Whisk – 30 seconds, speed 6
  31. Making the praline:
  32. Mix the ingredients in a saucepan and heat until caramel-coloured
  33. Spread on a sheet of greaseproof paper and leave to cool completely
  34. Break the mixture into pieces and mix with the ingredients
  35. Assembly:
  36. Place a vanilla sponge on a cake board
  37. Spread the ganache thinly
  38. Place the chocolate sponge on top
  39. Spread the ganache thinly
  40. Add the praline on top
  41. Place the vanilla sponge on top
  42. Spread the icing thinly and decorate
  43. Chill in the fridge until needed
  44. Trim the sides of the cake for a neat and beautiful result
  45. Serve
