A twist on a classic yule log filled with sweetened cream and sharp cherry compote

Step preview

  1. Pre-heat oven - 180°C
  2. Line a clean swiss roll pan with parchment paper
  3. Attach Whisk
  4. Add egg, caster sugar and vanilla extract to the Kenwood Bowl
  5. Mix with splashguard fitted - 4 min, Speed Max
  6. Then add all purpose flour, cocoa powder and baking powder to the Kenwood Bowl
  7. Mix with splashguard fitted - 1 min, Speed 2
  8. Transfer batter to swiss roll pan
  9. Bake - 12 min, 180°C
  10. Remove from oven and let cool - 5 min
  11. Line a clean work surface with parchment paper
  12. Turn out cake onto work surface carefully
  13. Roll into a log then set aside
  14. Add frozen cherries, kirsch, orange, ground cloves, star anise pod, cinnamon stick and caster sugar to a clean saucepan
  15. Add cornstarch and water to a clean small bowl
  16. Stir until combined
  17. Transfer cornflour mixture to saucepan
  18. Cook while stirring occasionally - 10 min, medium-low heat
  19. Transfer content of saucepan to medium bowl and let cool
  20. Clean Kenwood Bowl
  21. Attach Whisk
  22. Add whipping cream, vanilla extract and icing sugar to the Kenwood Bowl
  23. Mix with splashguard fitted - 1 min, Speed 4
  24. Gently unroll the cooled cake
  25. Spread the cake with whipped cream
  26. Top with the content of the medium bowl
  27. Roll into a log
  28. Dust with icing sugar
  29. Serve
