  1. Grease a springform pan and set aside
  2. Fit the K- Beater
  3. Add the ingredients into the appliance bowl, fit the splashguard
  4. Slowly add the water while the machine is running - 2 minutes, speed 2
  5. Mix - 30 seconds, speed 3
  6. Transfer the pastry to a lightly floured work surface
  7. Roll out the pastry into a rectangle, about 15 x 45cm
  8. Fold one third into the centre
  9. Fold the other third over the top
  10. Turn the pastry 90°
  11. Roll out the pastry into a rectangle, about 15 x 45cm
  12. Fold one third into the centre
  13. Fold the other third over the top
  14. Turn the pastry 90°
  15. Repeat the rolling and folding two more times
  16. Roll out the pastry into a circle, larger than your springform pan
  17. Transfer the pastry to the pan, line the edges and trim the excess
  18. Chill in the fridge - 10 minutes
  19. Preheat an oven to 190ºC
  20. Retrieve the pastry from the fridge
  21. Line the pastry with parchment paper and fill with baking beans
  22. Bake - 10 minutes, 190°C
  23. Remove from the oven and continue
  24. Clean the appliance bowl and fit the Whisk Tool
  25. Add the ingredients into the appliance bowl, fit the splashguard
  26. Whisk until pale - 2 minutes, speed 3
  27. Then add the ingredients
  28. Whisk - 30 seconds, speed 3
  29. Pour the filling into the pastry case
  30. Top with figs
  31. Bake - 25 minutes, 190°C
  32. Remove from the oven and let cool on a cooling rack
  33. Garnish with pistachios
  34. Serve
